This really helped…..was pretty surprised to find the exact answer to my question in a video. I guess I'm not the only one that has had trouble with this.

How would this winch unspool if there is a ratchet on it?

Thanks for your question! Scrub to the 3:04 mark of this video for the answer to your question. If you hold the ratchet pawl off of the winch's gears, cable or strap can easily be unspooled from the winch's reel.
It would be really nice if you could simply purchase the ratchet spring separately instead of having to buy this whole kit. I've had my winch for just a year, and found the spring just gone one day at the boat ramp. It was there when i put in, and gone when I went to load the boat. So either someone grabbed it in the parking lot or it came off/broke somehow. Either way $10 for the kit and $5 shipping just for that spring. Plus, I'd love to just have a couple extras to keep in the truck for situations like this.
